Start with the nanban sauce, it’s sweet, tangy, and the heart of this dish. In a small saucepan, combine soy sauce, vinegar, sugar, and mirin, then bring it to a gentle boil. Let it simmer for about 2–3 minutes, just until the sugar dissolves and the flavors blend together. Once done, set it aside to cool. It’s simple to make, but it adds incredible depth to the chicken.

Boil two eggs for 12 minutes. While they’re cooking, dice your onion and soak it in cold water for 10 minutes to remove its sharpness, then squeeze out the excess liquid. Slice your green onion thinly. Once the eggs are ready, peel and finely chop them. Mix all the ingredients in a bowl with mayonnaise, lemon juice, ketchup, salt, and pepper. Give it a good stir. That’s your creamy, rich tartar sauce, perfect not just for this recipe but for any fried dish you make.

Lightly pound your chicken thighs to even out their thickness, ensuring they cook evenly. Make small cuts along the edges to prevent curling. Season with salt and pepper, coat with flour, and dip in beaten egg. Heat your oil to 170°C (340°F). Fry the chicken for about 7–8 minutes, or until golden brown and crispy. You can deep-fry or shallow-fry both work great. Once done, drain the chicken and dip it straight into the nanban sauce. Move it around to make sure every piece gets coated.

On a plate, start with a layer of fresh lettuce or shredded cabbage to add a bit of crunch.Place the crispy chicken on top, letting the golden pieces stand out against the greens.
